Spiced nuts are a festive and delicious way to snack during cocktail hour. This recipe combines a mixture of nuts and crunchy seeds flavored with vanilla, plus a touch of cayenne for some sweet heat.
Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
Combine the mixed nuts, pepitas and sunflower seeds in a large bowl. In a separate bowl, whisk together the egg white, maple syrup, olive oil, pumpkin pie spice, salt, vanilla extract, vanilla bean seeds and cayenne; pour over the nut mixture and toss to coat.
Spread the nut mixture on the prepared baking sheet and bake, stirring once, until golden, about 40 minutes. Let cool.
